Energy balls recipe

Since classes will start again on Monday and we are probably all in need of an extra energy boost, I wanted to share this quick and easy recipe for energy balls. They are not only healthy but also taste like heaven and are the perfect treat for a quick study break.

Ingredients:

  • 125 g. of nuts
  • 1 big handful of pumpkin seeds
  • 1 tbsp. of chia seeds
  • 100 g. of dates
  • 3 tbsp. of honey
  • 2 tbsp. of almond butter
  • 4 tbsp. of cinnamon

What to do:

  • Mix the nuts, pumpkinseeds and chia seeds and crush them with a cooking machine or a mixer for about 30 seconds until they form a sort of grainy powder.
  • Add dates, honey, almond butter and cinnamon and mix everything until they form a sticky mouse
  • Form little balls with your hands and put them in the freezer for about an hour. Once frozen, you can store them in the fridge
  • Enjoy!

Tips and tricks:

  • I used cashew nuts for the energy balls that I made; however, you can use all sorts of nuts, like walnuts which are available through Scoop
  • Pumpkinseeds are also available through Scoop
  • If you don’t have any almond butter, you can easily replace it with peanut butter
  • To make vegan energy balls, just replace the honey with agave syrup
