Since classes will start again on Monday and we are probably all in need of an extra energy boost, I wanted to share this quick and easy recipe for energy balls. They are not only healthy but also taste like heaven and are the perfect treat for a quick study break.
Ingredients:
- 125 g. of nuts
- 1 big handful of pumpkin seeds
- 1 tbsp. of chia seeds
- 100 g. of dates
- 3 tbsp. of honey
- 2 tbsp. of almond butter
- 4 tbsp. of cinnamon
What to do:
- Mix the nuts, pumpkinseeds and chia seeds and crush them with a cooking machine or a mixer for about 30 seconds until they form a sort of grainy powder.
- Add dates, honey, almond butter and cinnamon and mix everything until they form a sticky mouse
- Form little balls with your hands and put them in the freezer for about an hour. Once frozen, you can store them in the fridge
- Enjoy!
Tips and tricks:
- I used cashew nuts for the energy balls that I made; however, you can use all sorts of nuts, like walnuts which are available through Scoop
- Pumpkinseeds are also available through Scoop
- If you don’t have any almond butter, you can easily replace it with peanut butter
- To make vegan energy balls, just replace the honey with agave syrup
